Our production

The production of our oil is not just an agricultural process but a true ritual that renews itself every year. For generations we have cared for our olive trees as part of our family, following traditional methods and combining them with modern techniques, always with the utmost respect for nature. The result is an olive oil that embodies the history of our land, the patient work in the fields and our passion for excellence.

Everything begins in the heart of our olive groves, where each tree is carefully tended throughout the year. The first key operation is pruning, carried out every year and personally done by me to maintain the optimal vegetative and productive balance of the trees. This important task takes place in March and April, so the plants experience less stress from any late winter cold. Nutrition is just as essential because “you must give in order to receive”: every two years we apply organic fertilization using products allowed in organic farming, such as manure and poultry compost.

Flowering is the most important moment of the season and usually occurs at the end of May. If the weather is particularly dry, the flowers cannot develop and bloom properly. For this reason, our olive groves in Arco are equipped with sub-irrigation systems to support the plants during periods of stress.
We do not use intensive methods: we believe that true quality comes from respecting nature’s rhythms. Our goal is not quantity but authenticity.

The harvest, usually in mid-October, is the most anticipated moment. The olives are picked when they reach the perfect stage of ripeness, ensuring a balance between flavor and nutritional properties. Harvesting is done by hand or with gentle tools that do not damage the fruit or the tree. Immediately afterward, the olives are placed in small aerated crates to avoid crushing and fermentation. This care makes the difference: only the freshest olives can produce high quality oil.

Within a few hours of harvesting, the olives arrive at the mill. Here the transformation begins: crushing breaks the pulp and releases the first aromas, followed by kneading, which gently blends the olive paste. Extraction is carried out strictly cold, at a controlled temperature, to preserve polyphenols, natural antioxidants and all the sensory characteristics that make our oil unique. This traditional approach ensures a pure product, with an intense color and a bold yet balanced flavor.

Once extracted, the oil is filtered and immediately bottled at a constant temperature, protected from light and air. This preserves its aromas and nutritional qualities.
