Introducing myself

I am Rolando Del Fabbro, agronomist, graduated in Agricultural Sciences in 2012 at the University of Pisa with a specialization in Agri-food Production and Agroecosystem Management.
My passion for olive growing and high quality olive oil developed over the years: as a child, when I went to the mill with my grandfather Giuseppe to watch the milling operations, and later during my university studies, when I took exams in tree crops and olive growing with Professor Gucci, a leading expert in the olive sector.
The company was founded in 2022, taking over the management of my family’s land in Arco (TN), which has always been cultivated using organic farming methods.
Since 2025, in addition to the land in the municipality of Arco, we have also taken over two olive groves in Stio, in the province of Salerno, in the unspoiled heart of the Cilento National Park.

The family

Ours is a very small family business that aims to produce superior quality extra virgin olive oils while respecting the surrounding environment.
Extraemo is the brand we have chosen for our oils as the plants from which they derive are grown in "extreme" environments for olive cultivation: Arco (TN) is the northernmost border in the world for the production of extra virgin olive oil (46th parallel north).
Stio (SA) is located at an altitude just above the limit for olive growing (700 m above sea level) in the heart of the Cilento National Park. All this is possible thanks to the support of my family, especially my wife, Rita, who helps me on this wonderful mission.

Where to find us

Our company is rooted in Arco (TN), in the heart of Garda Trentino, where the mountains meet Lake Garda, creating a unique microclimate that allows the olive tree to grow at its northernmost latitude. Our olive groves are located here, between the “Busa” of Arco and its hamlets, but also further south in the Cilento National Park (SA), in an unspoiled area that gives our oils different aromas and characteristics. From Alto Garda to Cilento, we carefully cultivate our trees, combining tradition and innovation to bring the essence of extreme and extraordinary places into our products.
